The Evolution of the Vanilla Milkshake
The history celebrated on June 20 tracks several major culinary and technological milestones:
1885 — The Boozy Origins: The term "milkshake" first appeared in print in 1885. At the time, it was an adult beverage served in bars and pharmacies. It was a tonic similar to eggnog, made with cream, eggs, and whiskey. [1, 2, 3]
Early 1900s — The Soda Fountain Era: By 1900, the whiskey was dropped to make the drink kid-friendly. Soda fountains began serving wholesome versions made with milk, malt, and flavored syrups—most notably vanilla, chocolate, and strawberry. At this point, they were still vigorously shaken by hand using metal tumblers.
1922 — The Modern Masterpiece: The modern vanilla milkshake as we know it was born in Chicago. A Walgreens employee named Ivar "Pop" Coulson took a standard malted milk drink and added two generous scoops of vanilla ice cream to it. It became an instant national sensation.
1922 — The Electric Blender: That same year, Stephen Poplawski invented the electric drink mixer. This allowed soda fountain workers ("soda jerks") to blend smooth, frothy milkshakes quickly, moving the drink from a premium novelty to a mainstream American staple.
1950s — Pop Culture Icon: By the mid-20th century, vanilla milkshakes became synonymous with American diner culture, teenage hangouts, drive-ins, and jukeboxes.
